2011 and wedding cakes!

It's been a while since I last wrote mainly due to Christmas, lugging around 18ft plus Christmas trees and balancing on top of ladders with decorations stuffed into pockets and dangling from finger tips! Now we have finally reached 2011, the year of my wedding I am starting to seriously think about what I need to get organised for our big day! It's still 8 months away but I am sure it will fly by. You may notice my writing getting more and more frantic as the months go by but you never know I could keep this calm and composed!
So today I have been think about cake! Some people may spend most days thinking about cake but not me, I don't really have a sweet tooth, chips on the other hand, they are definitely often on my mind! (not good for a brides to be, I know!) I don't think I could have a cake of chips. Not the feel I had in mind for my wedding day! So what type of cake to have and whether to have it elaborately decorated with flowers. If I do want it elaborately decorated with flowers should they be hand crafted sugar flowers or fresh... decisions decisions. I have dressed quite a lot of wedding cakes and cake tables. I don't think I've ever done two the same!

The most elaborate would have to be a very large three tiered white chocolate cake that I was placed white rose heads in between each layer. It looked lovely even when the heat got to it a bit and the people who delivered the cake stood with it with an extremely worried look on their face while the cake slipped and slid into place!

The simplest was to dress around the cake on the table with soft ruskus and a few guelda rose heads which looked really beautiful. The lime green of the guelda rose contrasting in the crisp white of the cake and black ribbon.

The only thing that you have to be a bit aware of is if the flowers will drop any pollen or sap onto the cake. Obviously this wont kill anyone but might not taste the best! Sealing the ends of flowers like cymbidium orchids with some gutter tape and making sure the pollen is removed from lilies should be fine but just be aware. If you want to use flowers that might be likely to wilt like daffodil es, tulips and anenomies then it's always best to make sure they are either in their own little tubes of water or in an oasis.
If you want a large arrangement of flowers on the top of the cake you can get small round plastic trays that can be used to hold a reasonable sized arrangement just make sure the tray is well disguised with foliage and flowers. If you want to have flowers flowing down and around the cake then you will have to put it together on the day. Once the cake is in place.

I would always recommend that the flowers that you use for the cake are the same as the flowers that you are using for the rest of the day as much as you can. Either contrasting against the colour of the cake or complimenting.
If you having something a bit wacky like a cheese cake then keeping things simple is always the best bet!
